  • 3 cans quality tuna (5 ounces each)
  • 2 1/2 celery stalks, chopped
  • 1/2 English cucumber, chopped
  • 45 radishes, chopped
  • 1/2 medium red onion, finely chopped
  • 1/2 cup pitted Kalamata olives, halved
  • Fresh parsley and mint (about 1 cup total)
  • Zesty Dijon mustard and lime dressing

Instructions

  1. In a small bowl, whisk together Dijon mustard, lime zest and juice until smooth.
  2. Gradually add olive oil while whisking until emulsified.
  3. Season with sumac, salt, pepper and crushed red pepper flakes if using.
  4. In a large bowl, combine drained tuna with chopped celery, cucumber, radishes, green onions, red onion, olives, parsley and mint.
  5. Mix gently with a wooden spoon.
  6. Pour dressing over the salad and toss gently to coat all ingredients evenly.
  7. Cover and refrigerate for at least 30 minutes for flavors to meld before serving.
