  • 1/2 cup warm water (for red layer)
  • 1 ounce blue gelatin (e.g., JELL-O Berry Blue)
  • 1/2 cup warm water (for blue layer)
  • 3 cups miniature marshmallows
  • 4-inch lollipop sticks

Instructions

  1. Spray an 8.5 x 11 inch baking dish with cooking spray.
  2. For the red layer, mix red gelatin with warm water in a microwave-safe bowl. Microwave for 1.5 minutes until dissolved, then stir in 1.5 cups marshmallows until coated. Microwave again for about 1 minute, then whisk until smooth. Cool slightly before pouring into the baking dish.
  3. Refrigerate until firm.
  4. Repeat the process for the blue layer using blue gelatin and remaining marshmallows, then pour over the set red layer. Chill until fully firm.
  5. Cut into strips and roll into pinwheels, inserting lollipop sticks halfway through each roll.
