  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • Boiling water (for the water bath)
  • Salted caramel sauce

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Wrap a 9-inch springform pan in tin foil and grease it lightly.
  3. Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the pan.
  4. Prepare apple filling by mixing sliced apples with brown sugar and cinnamon; layer over crust.
  5. Beat cream cheese with granulated sugar, brown sugar, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth; pour over apple layer.
  6. Combine topping ingredients—flour, brown sugar, cinnamon, oats, melted butter—and sprinkle over cheesecake.
