- 2 cups grated zucchini

Instructions
- Preheat oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
- Grate the zucchini and dice the apple.
- In a large bowl, mix flour, cinnamon, salt, baking powder, and baking soda.
- In another bowl, beat eggs and then add vegetable oil, vanilla extract, white sugar, and brown sugar; mix well.
- Combine wet ingredients with dry ingredients until just mixed; fold in zucchini, apple, and walnuts.
- Divide batter into prepared pans and bake: mini loaves for 35-40 minutes and full loaves for about 55 minutes or until a toothpick comes out clean.
- Cool in pans for about 20 minutes before transferring to wire racks to cool completely.
