  • 1 cup breadcrumbs (panko or Italian-style)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup melted butter
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika
  • Lemon wedges for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, toss shrimp with olive oil, salt, and pepper until well-coated.
  3. In another bowl, combine breadcrumbs, Parmesan cheese, melted butter, parsley, garlic, lemon juice, paprika, salt, and pepper.
  4. In a greased baking dish, layer half of the stuffing mixture at the bottom. Add seasoned shrimp on top and cover with the remaining stuffing.
  5. Bake for about 25 minutes or until golden brown.
  6. Let cool slightly before serving with fresh parsley and lemon wedges.
