  • 1 ½ pounds chicken thighs
  • 2 tablespoons olive oil
  • 3 teaspoons minced garlic
  • 4 tablespoons butter
  • 8 ounces baby bella mushrooms
  • 2 cups balsamic vinegar
  • ⅓ cup brown sugar
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, toss chicken thighs with olive oil, 2 teaspoons garlic, salt, and pepper.
  3. Brown the chicken in a skillet with melted butter and honey for 1-2 minutes per side.
  4. Transfer the chicken to the baking dish and add seasoned mushrooms around it.
  5. Bake for about 15 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. In the meantime, prepare the balsamic glaze by simmering vinegar and brown sugar until thickened.
