- 1½ cups chopped carrots
- 1 cup chopped celery
- 2 cups chopped yellow onion
- 3 tablespoons olive oil
- 3 tablespoons tomato paste
- 1½ tablespoons minced garlic
- 2 (32 oz) cartons low-sodium chicken or beef broth
- 1 cup pearl barley
- Fresh herbs (rosemary, thyme, parsley)
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the chuck roast until browned on all sides; set aside.
- In the same pot, sauté carrots, celery, and onion until softened.
- Stir in tomato paste and minced garlic; cook until fragrant.
- Add broth, soy sauce, Worcestershire sauce, fresh herbs, salt, pepper, and seared beef back to the pot.
- Bring to a simmer; reduce heat and cover for 45–60 minutes.
- Stir in pearl barley; cover and simmer for another 45–60 minutes until both beef and barley are tender.
- Garnish with fresh parsley before serving.
