  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef with onion and garlic until browned; drain excess fat.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
  4. Layer half of the corn tortillas at the bottom of the baking dish, followed by half of the beef mixture and half of the cheese.
  5. Repeat layers with remaining tortillas, beef mixture, and cheese on top.
  6. Bake for about 25 minutes until cheese is bubbly and lightly browned.
  7. Allow to rest before slicing. Enjoy!
