  • 150g (10 tbsp) unsalted butter
  • 5 garlic cloves, minced
  • Fresh rosemary and thyme
  • 1.5 cups beef broth
  • 2.5 cups dry red wine

Instructions

  1. Preheat your oven to 135°C (275°F).
  2. In a bowl, mix softened butter with minced garlic, chopped herbs, salt, and pepper.
  3. Generously rub the herb butter over the roast and place it on a bed of quartered onion and halved garlic in a roasting pan.
  4. Pour beef broth and wine around the meat, then insert a meat thermometer into the thickest part.
  5. Cook until internal temperature reaches desired doneness: Rare (50°C/120°F), Medium Rare (57°C/135°F), Medium (63°C/145°F).
  6. Rest for at least 20 minutes before slicing.
