  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. Cook the sausage in a non-stick skillet until browned. Transfer to a paper towel-lined bowl.
  2. In the same skillet, melt 2 tablespoons of butter and scramble the eggs until just set. Mix eggs with the cooked sausage.
  3. Butter one side of each slice of bread. In the skillet, place one slice butter-side down, layer with cheese, then add the sausage-egg mix and another slice of cheese.
  4. Top with another slice of bread, butter-side up. Cook until golden brown on both sides.
