  • 6 bone-in, skin-on chicken thighs
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground allspice
  • 2 tablespoons vegetable oil
  • 1 medium onion
  • 3 garlic cloves
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium tomato
  • 1 Scotch bonnet pepper
  • 1½ cups long-grain white rice
  • 1½ cups chicken broth
  • 1 cup coconut milk

Instructions

  1. Season chicken with salt, black pepper, paprika, allspice, garlic powder, and onion powder.
  2. In a large pot, heat oil over medium heat and sear the chicken until golden brown on both sides. Remove and set aside.
  3. Sauté onions until translucent; add garlic and bell peppers, cooking for an additional five minutes.
  4. Stir in thyme, allspice, smoked paprika, and rice until well-coated.
  5. Pour in chicken broth and coconut milk; return seared chicken to the pot along with the Scotch bonnet pepper.
  6. Cover and simmer on low for about 40 minutes until rice is tender.
