  • 1 cup canola oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 2 cups shredded carrots
  • 1 container (16 oz) cream cheese frosting
  • 16 oz Ghirardelli white chocolate melting wafers
  • 1 cup pecan chips

Instructions

  1. Preheat oven to 350°F and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a stand mixer, combine sugar, canola oil, and eggs until mixed well.
  3. Add flour, baking soda, cinnamon, and mix until just combined.
  4. Fold in shredded carrots and pecan chips.
  5. Pour batter into the baking dish and bake for 30–40 minutes or until a toothpick comes out clean.
  6. Cool the cake completely before crumbling it into fine crumbs in a mixing bowl.
  7. Mix in cream cheese frosting until a dough forms.
  8. Roll into balls using an ice cream scoop and chill for an hour.
  9. Melt white chocolate and dip each truffle before adding additional pecans on top.
