  • 8 oz cream cheese (cold)
  • 1 cup powdered sugar

Instructions

  2. In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In another bowl, whisk eggs and combine with sugar, oil, and vanilla until smooth.
  4. Gradually fold in dry ingredients and then add shredded carrots.
  5. Spread batter evenly in the pan and bake for 10-13 minutes until done.
  6. Roll the baked cake in parchment paper while warm; let cool for about 10 minutes.
  7. For frosting, beat cold cream cheese and gradually add butter until smooth; mix in powdered sugar.
  8. Unroll the cooled cake gently, spread the frosting on it, then re-roll tightly.
