- 2 eggs, whisked
- 1 tbsp vanilla extract
- 1/2 cup (112 g) unsalted butter, very softened
- 1 cup (220 g) light brown sugar, packed
- 1 1/2 tsp ground cinnamon
- 3/4 tsp ground ginger
- 1/4 tsp ground allspice
- 1/4 tsp ground nutmeg
- 3/4 tsp ground cardamom
- 1/8 tsp ground cloves
- 1/3 cup (116 g) honey
- 6 tbsp (84 g) unsalted butter, very softened
- 1 cup (220 g) light brown sugar, packed
- 6 oz (170 g) cream cheese, softened
- 3/4 cup (97 g) powdered sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- pinch of cloves
Instructions
- Warm milk to about 110°F. Combine with yeast and sugar; let sit for 5–10 minutes until frothy.
- In a bowl, mix flour, salt, and spices. Add the yeast mixture along with eggs, vanilla extract, and softened butter; mix until combined.
- Knead the dough until smooth and elastic (about 5–7 minutes). Let it rise in a greased bowl until doubled in size (60–90 minutes).
- Prepare the filling by mixing brown sugar and spices. Roll out the dough, spread the filling evenly, then roll tightly into spirals.
- Cut into rolls and place in a baking pan. Let rise again before baking at 350°F for 25–30 minutes until golden brown.
- Allow to cool slightly before frosting with cream cheese mixture.
