  • 3/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1 1/2 tsp salt
  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs, whisked
  • 1 tbsp vanilla extract
  • 1/2 cup (112 g) unsalted butter, very softened
  • 1 cup (220 g) light brown sugar, packed
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 3/4 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1/3 cup (116 g) honey
  • 6 tbsp (84 g) unsalted butter, very softened
  • 1 cup (220 g) light brown sugar, packed
  • 6 oz (170 g) cream cheese, softened
  • 3/4 cup (97 g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • pinch of cloves

Instructions

  1. Warm milk to about 110°F. Combine with yeast and sugar; let sit for 5–10 minutes until frothy.
  2. In a bowl, mix flour, salt, and spices. Add the yeast mixture along with eggs, vanilla extract, and softened butter; mix until combined.
  3. Knead the dough until smooth and elastic (about 5–7 minutes). Let it rise in a greased bowl until doubled in size (60–90 minutes).
  4. Prepare the filling by mixing brown sugar and spices. Roll out the dough, spread the filling evenly, then roll tightly into spirals.
  5. Cut into rolls and place in a baking pan. Let rise again before baking at 350°F for 25–30 minutes until golden brown.
