  • 1 tablespoon olive oil
  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Boil the tortellini according to package instructions (3-5 minutes). Drain and set aside.
  2. In a skillet over medium-high heat, add olive oil. Cook the ribeye steak for 3-4 minutes until browned. Remove from skillet.
  3. Sauté onions and bell peppers in the same skillet for about 5-6 minutes. Add garlic; cook for an additional 1-2 minutes.
  4. Add beef broth; simmer for 2-3 minutes while scraping bits from the skillet. Lower heat and stir in heavy cream until the sauce thickens.
  5. Mix in provolone and Parmesan cheeses until melted and smooth.
  6. Return steak to the skillet; add cooked tortellini and toss until well coated. Heat through for another 2-3 minutes.
  7. Serve immediately, garnished with fresh parsley.
