- 1 head cauliflower (chopped into florets)
- 2 slices bacon (chopped)
- 1 tablespoon olive oil
- ¼ cup yellow onion (diced)
- 3 garlic cloves (minced)
- 1 cup almond milk (or milk of choice)
- 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
- 1 cup shredded cheddar cheese
- 1 cup shredded parmesan cheese
- ½ teaspoon salt
- 2 tablespoons chives (chopped)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet over medium heat, cook the chopped bacon until crispy; set aside and reserve grease.
- Boil water in a saucepan, add cauliflower florets, cook for 5 minutes, then drain.
- In the skillet with bacon grease, sauté diced onion and minced garlic for 3–5 minutes until soft.
- Whisk together almond milk and flour in a bowl; add to the skillet and bring to a low boil.
- Add cheddar, parmesan, and salt; whisk until smooth.
- Combine drained cauliflower with cheese sauce; transfer to an 8×8-inch baking dish.
- Sprinkle cooked bacon on top and bake for 20 minutes until golden brown.
