  • 1 head cauliflower (chopped into florets)
  • 2 slices bacon (chopped)
  • 1 tablespoon olive oil
  • ¼ cup yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • ½ teaspoon salt
  • 2 tablespoons chives (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the chopped bacon until crispy; set aside and reserve grease.
  3. Boil water in a saucepan, add cauliflower florets, cook for 5 minutes, then drain.
  4. In the skillet with bacon grease, sauté diced onion and minced garlic for 3–5 minutes until soft.
  5. Whisk together almond milk and flour in a bowl; add to the skillet and bring to a low boil.
  6. Add cheddar, parmesan, and salt; whisk until smooth.
  7. Combine drained cauliflower with cheese sauce; transfer to an 8×8-inch baking dish.
  8. Sprinkle cooked bacon on top and bake for 20 minutes until golden brown.
