  • 2 boneless, skinless chicken breasts (or 2 cups rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice
  • 2 cups broccoli florets
  • 10.5 oz cream of chicken soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, melt butter over medium heat. Cook diced chicken until golden.
  3. Add chicken broth and rice; bring to a boil. Reduce heat and simmer covered for 6 minutes.
  4. Stir in broccoli; cover and cook an additional 9 minutes until rice is tender.
  5. Combine cooked chicken (if using), cream of chicken soup, milk, sour cream, half the cheese in the pot; mix well.
  6. Pour mixture into a greased casserole dish and top with remaining cheese.
  7. Cover with foil; bake for 15 minutes. Uncover, add crushed crackers mixed with melted butter on top, then bake uncovered for another 10 minutes until golden.
