- 1 medium green bell pepper

- 8 tortillas
- 1 cup Tex-Mex cheese
- 2 tablespoons butter
Instructions
- Season chicken strips with fajita seasoning.
- Heat olive oil in a skillet; cook chicken until fully cooked. Set aside.
- In the same skillet, sauté onions until translucent, then add bell peppers and remaining seasoning. Cook until tender.
- Return chicken to the skillet and mix well.
- In a separate skillet, melt butter and place one tortilla inside. Add chicken mixture and cheese to half the tortilla, fold over, and cook until golden brown on both sides.
