  • 68 thinly sliced chicken breasts
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1 Tbs hot sauce
  • Oil for frying
  • 1/4 cup reserved oil from frying
  • 1/3 cup flour for gravy
  • 2 cups milk
  • Salt & pepper for gravy

Instructions

  1. Heat oil in a deep fryer or large pan to 325°F.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
  3. In another bowl, mix buttermilk, egg, and hot sauce.
  4. Dredge each chicken breast in the flour mixture, dip into the egg mixture, then return to the flour.
  5. Fry chicken for about 3-5 minutes per side until golden brown; drain on paper towels.
  6. For gravy, use reserved oil to cook flour over medium heat before gradually adding milk and seasoning until thickened.
  7. Serve hot by pouring gravy over the chicken.
