  • 16 skewers
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 2 tablespoons brown sugar
  • 1 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • Chopped roasted peanuts
  • Sliced red chilis
  • Lime wedges
  • Cilantro leaves

Instructions

  1. Marinate chicken: In a bowl, mix coconut milk, soy sauce, red curry paste, fish sauce, brown sugar, garlic, curry powder, salt, and white pepper. Add chicken strips and coat evenly. Refrigerate for at least 1 hour.
  2. Make peanut sauce: In a saucepan over medium heat, combine peanut butter, coconut milk, brown sugar, red curry paste, soy sauce, fish sauce, and lime juice. Whisk until smooth and simmer for about 5 minutes until thickened.
  3. Prepare skewers: Soak wooden skewers if using; thread marinated chicken onto skewers.
  4. Grill chicken: Preheat grill over medium-high heat and grill skewers for 3-4 minutes on each side until cooked through.
