  • 1 serrano pepper or jalapeño, finely diced
  • 1/2 teaspoon salt
  • 4 garlic cloves, minced
  • 2-inch piece of fresh ginger, peeled and grated
  • 23 tablespoons curry powder
  • 1/2 teaspoon Indian red chili powder or regular chili powder
  • 1 teaspoon garam masala (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon black pepper
  • 1 (14.5 oz) can crushed tomatoes
  • 3 cups baby spinach, roughly chopped
  • 12 tablespoons lemon juice
  • 1/4 cup chopped cilantro, plus more for garnish

Instructions

  1. In a large sauté pan, heat oil over medium-high heat. Sauté diced onion and finely chopped pepper until softened.
  2. Add chicken pieces and cook until lightly browned.
  3. Stir in minced garlic, grated ginger, and spices; cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes, then add sweet potatoes and coconut milk; bring to a gentle boil.
  5. Reduce heat and cover; simmer for 15 minutes until sweet potatoes are tender.
  6. Stir in fresh spinach until wilted; finish with lemon juice and cilantro.
