Ingredients

- 1 large zucchini
- ½ yellow onion
- 1 pint grape tomatoes
- 1½ cups basmati rice
- 3 cups chicken stock
- ¼ cup crumbled feta cheese
- Tzatziki sauce for serving
Instructions
