  • 1 large zucchini
  • ½ yellow onion
  • 1 pint grape tomatoes
  • 1½ cups basmati rice
  • 3 cups chicken stock
  • ¼ cup crumbled feta cheese
  • Tzatziki sauce for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix smoked paprika, seasoning salt, turmeric, and cayenne.
  3. In a microwave-safe bowl, combine vinegar, sugar, and salt; microwave until dissolved. Add sliced red onions and refrigerate.
  4. In a 9×13-inch casserole dish, layer diced chicken seasoned with half the spice mixture. Add rice, zucchini, and tomatoes on top.
  5. Whisk together chicken stock with remaining spices; pour over the casserole.
  6. Sprinkle feta on top and add lemon wedges.
  7. Cover with foil and bake for 40 minutes; uncover and bake an additional 10-20 minutes until rice is tender.
