  • 2 tablespoons olive oil or 1/4 cup water/broth
  • 1 large onion, diced
  • 34 garlic cloves, minced
  • 2-inch piece of ginger, minced or grated
  • 2 cans (14oz) diced tomatoes
  • 2 cans (14oz) chickpeas, drained and rinsed
  • 1 can (15oz) coconut milk
  • Spices: cumin seeds, turmeric, garam masala, cayenne

Instructions

  1. Heat olive oil (or water) in a large pot over medium heat. Add onion and cumin seeds; cook until onions are browned.
  2. Stir in minced ginger and garlic; cook for another minute.
  3. Add spices (turmeric, garam masala, cayenne); cook until fragrant.
  4. Incorporate diced tomatoes and simmer for about 4 minutes.
  5. Add chickpeas and coconut milk; stir well and bring to a gentle simmer.
  6. Cover and let it simmer on low heat for 25–30 minutes, stirring occasionally.
  7. Taste and adjust seasonings as needed before serving hot with rice or naan.
