Ingredients

- 3–4 garlic cloves, minced
- 2-inch piece of ginger, minced or grated
- 2 cans (14oz) diced tomatoes
- 2 cans (14oz) chickpeas, drained and rinsed
- 1 can (15oz) coconut milk
- Spices: cumin seeds, turmeric, garam masala, cayenne

- Heat olive oil (or water) in a large pot over medium heat. Add onion and cumin seeds; cook until onions are browned.
- Stir in minced ginger and garlic; cook for another minute.
- Add spices (turmeric, garam masala, cayenne); cook until fragrant.
- Incorporate diced tomatoes and simmer for about 4 minutes.
- Add chickpeas and coconut milk; stir well and bring to a gentle simmer.
- Cover and let it simmer on low heat for 25–30 minutes, stirring occasionally.
