Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 14.5 oz canned diced tomatoes (undrained)
- 16 oz elbow macaroni
- 2 cups shredded cheddar cheese
- 2 tbsp taco seasoning
Instructions
- Cook elbow macaroni in boiling water according to package instructions until al dente; drain.
- In a large skillet, brown ground beef with diced onions over medium heat until no longer pink; drain excess fat.
- Stir in diced tomatoes, water, and taco seasoning into the skillet; simmer for 5 minutes.
- Mix the meat mixture with cooked pasta until well combined.
- Layer half of the mixture in a 13×9 baking dish, sprinkle with 1 cup of cheese, add remaining mixture on top.
- Cover with foil and bake at 350°F (175°C) for 30 minutes; uncover and add remaining cheese, baking for another 10 minutes until golden.
