Description

Chinese Chicken Salad is a vibrant and satisfying dish that combines shredded rotisserie chicken with an array of crunchy vegetables, all tossed in a flavorful Asian-inspired dressing. Fast to prepare, this salad is perfect for busy weeknights or as a refreshing option for gatherings.


Ingredients

  • 2 cups shredded rotisserie chicken breast
  • 1 head romaine lettuce, shredded
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup green onions, thinly sliced
  • 3 tablespoons cilantro leaves (optional)
  • Asian salad dressing (see recipe)
  • Crushed red pepper flakes, sesame seeds, slivered almonds, and wonton strips for garnish

Instructions

  1. In a large mixing bowl, combine shredded chicken and half the Asian dressing. Toss to coat and let marinate for at least 10 minutes.
  2. Add the romaine lettuce, iceberg lettuce, red cabbage, carrots, green onions, and cilantro to the bowl. Toss until well mixed.
  3. Pour the remaining dressing over the salad mixture and toss again.
  4. Garnish with crushed red pepper flakes, sesame seeds, slivered almonds, and crispy wonton strips before serving.
