- ⅓ cup olive oil
- ½ cup orange juice
- ¼ cup fresh lime juice
- ¼ cup chopped cilantro
- ½ cup chopped yellow onion
- 3 cloves garlic, diced
- 2 ounces achiote paste
- 1 tablespoon ground cumin
- 1 tablespoon kosher salt
- 1 tablespoon ground coriander
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- 1 teaspoon chipotle chile pepper
- Cilantro, chopped, for serving

Instructions
- In a blender, combine all marinade ingredients; blend until smooth.
- Place chicken in a ziplock bag or airtight container; pour marinade over it and mix well.
- Marinate in the refrigerator for 4 to 24 hours; let it sit at room temperature for 30 minutes before cooking.
- Preheat grill to medium-high heat (425-450°F). Grill chicken for 5-7 minutes per side until cooked through (165°F for breasts, 175°F for thighs).
