  • 45 pounds bone-in chicken thighs (or chicken breasts)
  • ⅓ cup olive oil
  • ½ cup orange juice
  • ¼ cup fresh lime juice
  • ¼ cup chopped cilantro
  • ½ cup chopped yellow onion
  • 3 cloves garlic, diced
  • 2 ounces achiote paste
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 1 tablespoon ground coriander
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle chile pepper
  • Cilantro, chopped, for serving
  • Fresh lime slices for serving

Instructions

  1. In a blender, combine all marinade ingredients; blend until smooth.
  2. Place chicken in a ziplock bag or airtight container; pour marinade over it and mix well.
  3. Marinate in the refrigerator for 4 to 24 hours; let it sit at room temperature for 30 minutes before cooking.
  4. Preheat grill to medium-high heat (425-450°F). Grill chicken for 5-7 minutes per side until cooked through (165°F for breasts, 175°F for thighs).
