  • 5 cups romaine lettuce leaves
  • 1 red bell pepper
  • 1 large mango
  • 1 avocado
  • Fresh cilantro
  • ½ cup freshly squeezed lime juice
  • 3 tablespoons olive oil
  • 4 cloves garlic, crushed
  • 2 teaspoons honey
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1¼ teaspoons salt

Instructions

  1. Whisk together olive oil, lime juice, chopped cilantro, garlic, honey, brown sugar, cumin, and salt in a bowl. Reserve one-third for dressing.
  2. Marinate chicken in the remaining mixture for at least 15 minutes (up to 2 hours for best flavor).
  3. Heat oil in a grill pan over medium-high heat and grill chicken for 5–6 minutes per side until cooked through.
  4. Grill red pepper until tender.
  5. Combine diced mango, avocado, green onion, and reserved dressing in a bowl to make the salsa.
  6. Assemble salad by layering romaine leaves, grilled peppers, sliced chicken, and mango salsa.
