  • 1/2 small shallot (or red onion)
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup oil (olive oil recommended)
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice (juice from 1 lime)

Instructions

  1. Cook noodles according to package instructions, slightly undercooking them for a chewy texture. Drain and rinse with cold water.
  2. In a large heat-proof bowl, combine cilantro, garlic, shallot, curry powder, sugar, and optional chili powder.
  3. Heat oil in the same pot over medium heat until hot. Test readiness with a piece of garlic; it should sizzle.
  4. Turn off heat and carefully pour hot oil over mixed ingredients; stir well.
  5. Add mushroom oyster sauce, dark soy sauce, and lime juice; mix thoroughly.
  6. Toss cooked noodles into the bowl with the sauce mixture until well-coated.
  7. Adjust seasoning as desired and serve hot.
