  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups shredded cabbage
  • ½ cup shredded carrots
  • 8 small corn tortillas

Instructions

  1. In a large bowl, combine cilantro, lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Add shrimp and toss to coat. Refrigerate for at least 15 minutes.
  2. For the slaw, mix cabbage, carrots, and cilantro in a bowl. In a separate bowl, whisk together lime juice, mayonnaise, Greek yogurt, vinegar, honey, salt, and pepper; pour over the cabbage mixture and toss well.
  3. Heat a grill pan over medium-high heat. Cook marinated shrimp for 2-3 minutes per side until pink and opaque. Remove from heat.
