  • 660 g powdered sugar
  • 2 tsp vanilla extract
  • 22 1/2 tbsp black coffee (cooled down to room temperature)
  • 1 tbsp instant espresso powder (optional, for more intense coffee flavor)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare three 9-inch round baking pans.
  2. Whisk together dry ingredients: flour, sugars, cocoa powder, baking powder, baking soda, cornstarch, and salt.
  3. In another bowl, mix wet ingredients: oil, sour cream, coffee, eggs, and vanilla until smooth.
  4. Combine wet and dry mixtures gently until just combined; avoid overmixing.
  5. Divide batter among pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before transferring to racks to cool completely.
  7. Prepare buttercream by beating butter until creamy; gradually add powdered sugar and cooled coffee until fluffy.
