  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 lbs ground beef
  • 1 lb Yukon Gold potatoes (about 4 medium), cut into 1-inch pieces
  • 4 carrots, peeled and sliced
  • 1 (14.5-ounce) can green beans, drained
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 3 tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes with juices
  • 46 cups beef broth
  • Seasonings: Italian seasoning, smoked paprika, chili powder, salt, pepper

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add the onion and celery; cook until soft (2–3 minutes). Stir in garlic for another minute.
  2. Add ground beef and cook until browned throughout.
  3. Mix in potatoes, carrots, green beans, tomato paste, diced tomatoes, black-eyed peas, corn, seasonings, and 4 cups of broth.
  4. Bring to a boil then reduce heat to simmer for about 14–16 minutes until potatoes are fork-tender.
  5. Serve hot with optional toppings like cheese or tortilla chips.
