  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano
  • 8 cups chicken broth
  • 1 medium potato, peeled and diced
  • 2 cups shredded or chopped cooked chicken
  • 1 cup half-and-half or whole milk
  • 34 cups uncooked wide egg noodles

Instructions

  1. In a large pot over medium heat, melt the unsalted butter. Add chopped onion, carrots, celery, and minced garlic; cook until softened (about 5 minutes).
  2. Stir in flour, salt, pepper, thyme, and oregano; cook for an additional 2 minutes.
  3. Pour in chicken broth and diced potato; bring to a boil without stirring for 3 minutes.
  4. Reduce heat to medium-low and cover partially; simmer for 25 minutes until potatoes are tender.
  5. Add cooked chicken, half-and-half or milk, and noodles; cook for another 10 minutes until noodles are tender.
  6. Serve warm with optional fresh thyme garnish.
