Instructions
- In a large pot over medium heat, melt the unsalted butter. Add chopped onion, carrots, celery, and minced garlic; cook until softened (about 5 minutes).
- Stir in flour, salt, pepper, thyme, and oregano; cook for an additional 2 minutes.
- Pour in chicken broth and diced potato; bring to a boil without stirring for 3 minutes.
- Reduce heat to medium-low and cover partially; simmer for 25 minutes until potatoes are tender.
