Ingredients
- 2 cups flour
- 1 ½ cups brown sugar
- 1 cup cold butter
- 1 ½ cups oats
- 2 (8 oz.) packages cream cheese
- ½ cup sugar
- 3 eggs
- ¼ cup milk
- 1 teaspoon vanilla extract
- ¼ cup lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
- In a food processor, combine flour and brown sugar; pulse in cold butter until crumbly. Add oats and mix briefly.
- Reserve 1 ½ cups of crumb mixture for topping; press the rest into the bottom of the pan and bake for 10 minutes.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one by one, then mix in milk, vanilla, lemon juice, and zest.
- Pour cheesecake filling over crust; sprinkle reserved crumbs on top and press gently.
- Bake for another 15-20 minutes until lightly browned. Cool completely before cutting.
