  • 1 ½ cups brown sugar
  • 1 cup cold butter
  • 1 ½ cups oats
  • 2 (8 oz.) packages cream cheese
  • ½ cup sugar
  • 3 eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
  2. In a food processor, combine flour and brown sugar; pulse in cold butter until crumbly. Add oats and mix briefly.
  3. Reserve 1 ½ cups of crumb mixture for topping; press the rest into the bottom of the pan and bake for 10 minutes.
  4. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one by one, then mix in milk, vanilla, lemon juice, and zest.
  5. Pour cheesecake filling over crust; sprinkle reserved crumbs on top and press gently.
  6. Bake for another 15-20 minutes until lightly browned. Cool completely before cutting.
