  • 3/4 cup sour cream, room temperature
  • 1 1/2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 tsp ground nutmeg
  • sprinkle of lemon juice
  • 1/2 cup caramel sauce
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into a greased 9×13 inch baking dish.
  3. Beat cream cheese until smooth; mix in sugar, flour, sour cream, vanilla extract, cinnamon, and eggs until combined.
  4. Pour cheesecake filling over the crust.
  5. Toss chopped apples with brown sugar and spices; layer on top of cheesecake filling.
  6. Bake for about 50 minutes until set; let cool before refrigerating for at least four hours.
  7. Serve chilled topped with whipped cream and extra caramel if desired.
