  • ¾ cup diced carrots
  • ¾ cup diced celery
  • ¾ cup diced onion
  • 4 cups diced potatoes
  • 4 tablespoons butter
  • 1 to 2 cups cubed Velveeta cheese
  • 1½ cups whole milk
  • 3 cups chicken broth
  • ¼ cup all-purpose flour

Instructions

  1. Cook ground beef in a large pot over medium heat for 6-8 minutes until browned. Drain fat and set aside.
  2. In the same pot, melt 1 tablespoon of butter and sauté carrots, celery, onions, basil, and parsley for about 10 minutes until tender.
  3. Add potatoes, cooked beef, and chicken broth; bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes until potatoes are tender.
  4. In a separate pan, melt remaining butter and whisk in flour; cook until bubbling. Stir into soup to thicken.
  5. Reduce heat; add Velveeta cheese and milk until melted. Stir in sour cream before serving.
