  • 2 cups Granulated White Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 2 Large Eggs
  • 1 1/4 cups Milk
  • 2 3/4 cups All-Purpose Flour
  • 2 1/2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3 ounces Red Gelatin Powder (Cherry or Strawberry)
  • 3 ounces Blue Gelatin Powder (Berry)
  • 1 cup Butter (for frosting)
  • 1 teaspoon Pure Vanilla Extract (for frosting)
  • 5 cups Confectioners' Sugar
  • 12 tablespoons Milk
  • Red and Blue Icing Gel or Food Coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
  2. In a mixing bowl, cream together butter, sugar, and vanilla. Add eggs one at a time.
  3. Gradually mix in milk and dry ingredients until just combined.
  4. Divide batter into three bowls; color one red and another blue using gelatin powder.
  5. Layer batters into cupcake liners: blue on the bottom, then white, followed by red on top.
  6. Bake for about 18 minutes or until toothpick comes out clean. Cool on a rack.
  7. For frosting, beat butter and half the sugar; gradually add remaining sugar and milk until smooth.
  8. Frost cooled cupcakes and decorate as desired.
