  • 1 cup unsalted butter, cold & cubed
  • 1 large egg (for egg wash)
  • 1/4 cup cornstarch
  • pinch of salt
  • 1/4 cup cold water
  • 1 tablespoon water
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a 9-inch pie plate by buttering it generously.
  2. In a saucepan over medium heat, combine pitted cherries, lemon juice, sugar, cornstarch, and salt; simmer for about 10 minutes until thickened, then let cool.
  3. For the crust, mix flour and sugar in a bowl; cut in cold butter until crumbly. Add cold water to form dough, then chill for at least 30 minutes.
  4. Roll out dough into two discs on floured surfaces. Place one disc in the pie plate and fill with cooled cherry mixture.
