Ingredients
- 500 g skinless, boneless salmon fillets
- 15 g fresh herbs (dill, parsley, or chives)
- 1 lemon (zest only)
- 1 tsp garlic powder
- 1 medium egg
- 4 tbsp plain flour
- Salt and pepper to taste
- Olive oil for frying
- 300 ml natural yogurt
- ½ cucumber (grated)
- 1 clove garlic (crushed)
Instructions
- Cut the salmon into bite-sized pieces and place in a food processor. Add fresh herbs, lemon zest, garlic powder, egg, flour, salt, and pepper. Pulse until just combined.
- Gently fold in defrosted peas and enough milk until you achieve a thick batter.
- Heat olive oil in a frying pan over medium-high heat. Spoon four patties into the pan and cook for about 8-10 minutes per side until golden brown.
- For the tzatziki, mix yogurt, grated cucumber, and crushed garlic in a bowl until well combined.
- Serve each salmon burger on buns topped with lettuce and drizzled with tzatziki.
