  • 500 g skinless, boneless salmon fillets
  • 15 g fresh herbs (dill, parsley, or chives)
  • 1 lemon (zest only)
  • 1 tsp garlic powder
  • 1 medium egg
  • 4 tbsp plain flour
  • Salt and pepper to taste
  • Olive oil for frying
  • 300 ml natural yogurt
  • ½ cucumber (grated)
  • 1 clove garlic (crushed)

Instructions

  1. Cut the salmon into bite-sized pieces and place in a food processor. Add fresh herbs, lemon zest, garlic powder, egg, flour, salt, and pepper. Pulse until just combined.
  2. Gently fold in defrosted peas and enough milk until you achieve a thick batter.
  3. Heat olive oil in a frying pan over medium-high heat. Spoon four patties into the pan and cook for about 8-10 minutes per side until golden brown.
  4. For the tzatziki, mix yogurt, grated cucumber, and crushed garlic in a bowl until well combined.
  5. Serve each salmon burger on buns topped with lettuce and drizzled with tzatziki.
