  • ¼ teaspoon salt
  • 1¼ cups dark chocolate, chopped
  • ¼ cup butter
  • 2 eggs
  • ¾ cup caster sugar
  • ½ cup demerara sugar
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 320ºF (160ºC) fan or 338ºF (170ºC) conventional and line a baking tray with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water until smooth; stir in vanilla extract.
  3. In another bowl, whip eggs and sugars on high speed until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, chocolate chips, and salt.
  5. Fold melted chocolate into the egg mixture gently, then combine with dry ingredients until just mixed.
  6. Scoop batter onto the prepared tray and bake for 12-14 minutes until tops are set.
  7. Cool on the tray before transferring to a wire rack.
