  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) conventional.
  2. Melt chopped dark chocolate and butter in a heatproof bowl over simmering water; stir in vanilla once melted.
  3. In another bowl, whip eggs and sugars until light and fluffy, about 5 minutes.
  4. Sift together flour, cocoa powder, baking powder, and salt; mix in chocolate chips.
  5. Fold the melted chocolate into the egg mixture gently, then incorporate dry ingredients until just combined.
  6. Scoop tablespoons of batter onto a lined baking tray, spacing them well apart.
  7. Bake for 12–14 minutes until set with a crackly top; cool slightly before serving.
