  • 12 oz rigatoni pasta
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Cook the rigatoni in salted boiling water until al dente. Reserve ½ cup of pasta water and drain.
  2. In a skillet over medium-high heat, sear the chicken in olive oil for 5-7 minutes until golden brown. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and simmer for 2 minutes.
  4. Stir in heavy cream and simmer for another 3-4 minutes until slightly thickened. Mix in Parmesan cheese.
  5. Return chicken to the skillet, add rigatoni, and combine everything well. Simmer briefly before serving.
  6. Garnish with parsley and additional Parmesan if desired.
