  • 1.5 lb skinless, boneless chicken thighs
  • 2 cups cooked jasmine rice
  • 8 oz grape tomatoes
  • 5 oz fresh spinach
  • 15 oz canned chickpeas
  • 6 oz feta cheese
  • Fresh lemon juice
  • Olive oil

Instructions

  1. Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a heavy skillet and cook chicken until fully cooked.
  2. In the same skillet, sauté grape tomatoes and garlic until softened. Add spinach until wilted.
  3. Stir in the cooked rice and chickpeas along with lemon juice. Mix well to combine.
  4. Prepare the feta mixture by mixing feta cheese with olive oil and lemon juice.
  5. Combine half of the feta mixture into the skillet with rice and add back the sliced chicken to reheat.
  6. Serve topped with remaining feta mixture and garnish with fresh oregano.
