Ingredients
- 1.5 lb skinless, boneless chicken thighs
- 2 cups cooked jasmine rice
- 8 oz grape tomatoes
- 5 oz fresh spinach
- 15 oz canned chickpeas
- 6 oz feta cheese
- Fresh lemon juice
- Olive oil
Instructions
- Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a heavy skillet and cook chicken until fully cooked.
- In the same skillet, sauté grape tomatoes and garlic until softened. Add spinach until wilted.
- Stir in the cooked rice and chickpeas along with lemon juice. Mix well to combine.
- Prepare the feta mixture by mixing feta cheese with olive oil and lemon juice.
- Combine half of the feta mixture into the skillet with rice and add back the sliced chicken to reheat.
- Serve topped with remaining feta mixture and garnish with fresh oregano.
