  • 3 tablespoons olive oil
  • 24 cloves garlic, minced
  • 1¼ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • 23 tablespoons acid (lemon juice, lime juice, vinegar)

Instructions

  1. Pound chicken to an even thickness of about ½ inch for uniform cooking.
  2. In a zip-top bag, combine olive oil, garlic, salt, pepper, and acid. Add chicken and marinate at room temperature for at least 30 minutes or refrigerate for up to 12 hours.
  3. Preheat grill to high heat (about 475°F). Clean and oil the grates.
  4. Remove excess marinade from chicken and grill smooth-side down for 4–5 minutes until it releases easily. Flip and cook for an additional 4–8 minutes until reaching an internal temperature of 155–160°F.
