  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 shallot (chopped)
  • 6 cloves garlic (minced)
  • 2 springs rosemary (chopped)
  • 1/4 cup parsley (chopped)
  • 1/4 cup tarragon (chopped)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup mint (chopped)
  • 2 lemons (juice of)
  • 1/4 tsp smoked paprika
  • 2 tsp kosher salt
  • 1 tsp black pepper

Instructions

  1. Pat the steaks dry and season generously with salt and pepper. Let sit for a few minutes.
  2. Prepare your grill by heating the charcoal until ashy.
  3. In a cast iron pan over medium heat, melt the butter and olive oil. Add shallots and garlic; cook until translucent.
  4. Stir in chopped herbs, lemon juice, smoked paprika, remaining salt, and pepper; set aside.
  5. Sear the steaks on direct heat for about 4 minutes per side.
  6. Move steaks to indirect heat; cook until an internal temperature of 135°F is reached (about 4 more minutes per side).
  7. Rest for 10 minutes before slicing and drizzle with lemon-herb sauce.
