  • 32 ounces small curd cottage cheese
  • 16 ounces shredded Colby Jack cheese
  • 1 pound bacon
  • ¾ cup all-purpose flour (or gluten-free substitute)
  • 10 ounces frozen chopped spinach
  • 1 cup red bell pepper
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×13-inch baking pan with nonstick cooking spray.
  2. Cook the bacon until crispy, then chop into pieces.
