  • 24 oz salmon (cut into 4 portions)
  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (chopped)
  • 1 cup cherry tomatoes (sliced in half)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup fresh grated parmesan cheese
  • Salt and pepper to taste
  • 1 serving Barilla protein pasta

Instructions

  1. Preheat a nonstick pan over medium heat.
  2. Cut salmon into four portions for even cooking.
  3. In the heated pan, add olive oil and place salmon skin-side down. Cook for about 5–6 minutes until golden, then flip and cook for another 5–6 minutes until fully cooked.
  4. In a bowl, whisk together milk and cornstarch until smooth. Remove salmon from the pan.
  5. Melt butter in the same pan over medium heat; sauté minced garlic for about 30 seconds until fragrant.
  6. Pour in the milk mixture; stir until thickened.
  7. Add spinach, cherry tomatoes, sun-dried tomatoes to the sauce; stir gently until spinach wilts.
  8. Mix in parmesan cheese along with salt and pepper.
  9. Cook pasta according to package instructions, drain, then toss with the sauce.
