  • ½ cup natural peanut butter
  • 4 tablespoons honey
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1¼ cups oat flour
  • 1 tablespoon baking powder

  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 425°F (220°C). Line a muffin tin with liners and lightly spray with oil.
  2. In a bowl, mash bananas until smooth. Stir in peanut butter, honey, eggs, and vanilla until combined.
  3. In another bowl, mix oat flour, baking powder, and salt. Fold dry ingredients into the wet mixture gently.
  4. Add dark chocolate chips and fold until evenly distributed.
  5. Fill muffin cups nearly to the top with batter. Bake at 425°F for 5 minutes, then reduce heat to 350°F (175°C) and bake for another 15 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack.
