  • 1 lb chicken tenderloins
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tsp hot sauce
  • Oil for frying

Instructions

  2. In another bowl, whisk together buttermilk, egg, and hot sauce until smooth.
  3. Heat about 3 inches of oil in a heavy-bottomed skillet over medium-low heat to 325°F.
  4. Dredge chicken tenders first in the flour mixture, then dip into the buttermilk mixture before returning to the flour for a second coating.
  5. Fry tenders in batches for 3–5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Drain on a wire rack.
