  • 1 large onion
  • 3 medium carrots
  • 2 celery ribs
  • 4 cloves garlic
  • 5 cups low sodium chicken broth
  • 1 can cannellini beans
  • 1 can red kidney beans
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • Dried pasta (elbow macaroni or ditalini)
  • Fresh herbs (parsley, rosemary, thyme)
  • Grated Parmigiano-Reggiano

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Add sausage and cook until browned.
  2. Stir in diced onion, carrots, celery, rosemary, thyme, and parsley; sauté until softened.
  3. Add minced garlic; cook until fragrant.
  4. Pour in chicken broth, beans, diced tomatoes (with juices), tomato sauce, salt, pepper, and bay leaves; bring to a boil then reduce to simmer for 5 minutes.
  5. Stir in pasta; simmer until al dente.
  6. Remove bay leaves and stir in Parmesan cheese. Adjust thickness with more broth if needed.
