  • 2 large eggs
  • 2 tablespoons Japanese BBQ sauce
  • 1 tablespoon dark brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dry mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a mixing bowl, combine dark brown sugar, smoked paprika, garlic powder, ground cumin, dry mustard, kosher salt, and black pepper. Toss the diced chicken in this mixture until evenly coated. Let rest for 10-20 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes or until browned and fully cooked. Remove from the skillet.
  3. Add remaining olive oil to the skillet and spread the chilled rice evenly. Create a well in the center and scramble the eggs until set before mixing them into the rice.
  4. Stir in Japanese BBQ sauce and return the cooked chicken to the skillet. Toss everything to combine thoroughly and serve immediately.
